Ginger Chicken

Here’s an easy chicken dinner that can be made in minutes. With fewer than 10 ingredients, this low-calorie ginger chicken recipe is packed with flavor.

Ingredients

  • 1/4 cup minced scallions

  • 1 Tbsp grated fresh ginger or ginger juice

  • 1/2 lemon, juiced

  • 1 Tbsp soy sauce

  • 1/4 tsp sugar

  • 1/4 tsp white vinegar

  • 3 cups shredded cooked chicken breast, warmed

  • 2 cups cooked brown rice, warmed

Volume 90%

Preparation

  • In a blender, combine scallions, ginger, lemon juice, soy sauce, sugar and vinegar, and blend until smooth. Arrange chicken over rice and top with ginger sauce.
