Here’s an easy chicken dinner that can be made in minutes. With fewer than 10 ingredients, this low-calorie ginger chicken recipe is packed with flavor.
Ingredients
1/4 cup minced scallions
1 Tbsp grated fresh ginger or ginger juice
1/2 lemon, juiced
1 Tbsp soy sauce
1/4 tsp sugar
1/4 tsp white vinegar
3 cups shredded cooked chicken breast, warmed
2 cups cooked brown rice, warmed
Volume 90%
Preparation
- In a blender, combine scallions, ginger, lemon juice, soy sauce, sugar and vinegar, and blend until smooth. Arrange chicken over rice and top with ginger sauce.
